Preheat the oven to 200oC (400OF, Gas Mark 6). Mix the lemon juice, garlic and parsley in a food processer until a paste is formed, set aside.
Pour the tomato into an oven proof dish.
Arrange the fish on the tomato and season with salt and pepper. Spread the paste over the fish.
Bake in the oven for 20 minutes or until the fish is cooked.
Serve with a side bowl of yoghurt and boiled rice from daily allowance.
