Ingredients
30ml (2 tbsp) olive oil
200g lean back bacon
200g onion
3 large carrots
3 stalks celery
2 ½ cups diced peeled butternut
7.5ml (½ tbsp) minced garlic
10ml (2 tsp) fresh thyme leaves
1.75 litres (7 cups) chicken stock
1 bay leaf
1 can butter beans
2 cups cooked small sized pasta
250g baby spinach leaves
salt and pepper
125ml (½ cup) Namaqua Extra Lite Crispy Dry White Wine
750g canned chopped tomatoes
Instructions:
Heat the olive oil in a large pot and add the diced bacon, cook until crisp and golden.
Add the diced onions, carrots, celery, butternut, garlic and thyme
cook for 10 minutes before adding the tinned tomatoes, chicken stock, bay leaf and seasoning.
Simmer for 30 minutes, or until veggies are tender.
Discard the bay leaf. Add the beans, spinach, white wine and cooked pasta and heat through.
