Blend the garlic, ginger, coriander stalks and chillies together to form a fine paste. Heat 20ml of the olive oil in a large non-stick pan, and lightly fry the sliced onion until soft and golden. Add the garlic paste and fry for a further minute before adding the dry spices. Transfer the spice mixture to a bowl and set aside. Heat the remaining oil in the same pan and fry the chicken until golden and cooked through. Remove the chicken from the pan. Return the onion mixture to the pan along with tinned tomatoes and a can full of water (400ml). Bring to a boil, reduce heat, and leave to simmer for 20 minutes. Return the chicken to the pan and leave to simmer for a further 10 minutes, before stirring in the yoghurt. Serve topped with the coriander leaves and rice from your daily serves.

Serves 4 – Better Choice recipe
Cut the eggplant into 1.5cm thick rounds and fry in a hot pan with the olive oil. Place the lentils, sliced spring onions and sliced tomatoes in a large bowl and drizzle over the olive oil and vinegar. Place a slice of eggplant on each serving plate. Top with a large spoonful of the lentil mixture, followed by half of the feta and half the basil. Continue layering with the remaining eggplant, lentils, feta and basil, finishing with a slice of eggplant. Top with rocket and serve.
Tasty tip: Replace the lentils with the same weight of smoked chicken or 160g lean biltong.

Serves 15 – Good Choice recipe
Heat the oven to 180°C and spray an 18cm x 27cm baking tin with non-stick spray. Place the drained beans and half the milk in a food processor and mix until smooth. Add the pie apples and vanilla essence, and blend until smooth. Sift the flour, baking powder, salt and cocoa powder in a bowl. Beat the eggs and extra egg white in a large bowl. Add the sweetener powder and mix well. Add 1/3 of the bean mixture into the egg and sugar mixture, then fold in a 1/3 of the sifted dry ingredients. Repeat. Pour the mixture into the prepared baking tin and level using the back of a spatula. Bake for 45 minutes. Remove from oven and cut into equal size pieces, then leave to cool in pan.

Bring a pot of water to gentle simmer and blanch the green beans for two minutes. Remove the green beans from the water with a slotted spoon and run under cold water to cool. Add the spirit vinegar to the pot and gently lower in the eggs, simmer for 5 minutes before running the eggs under cool water and peeling and cutting into quarters. Whisk oil, mustard, red wine vinegar, salt and pepper in a large bowl. Add shredded lettuce and toss to combine. Divide between serving bowls and top with drained tuna, halved tomatoes, olives, green beans, and eggs. Serve.
