Place the honey in a small pot and bring to a medium heat, add the peanut butter and butter and mix until evenly blended. Remove from heat and stir in the cereal and dried fruit. Drop mixture by the tablespoon into mini paper cupcake liners and refrigerate until set.

Cut the baby potatoes into bite-size wedges and cook in boiling water until tender. Heat the oil in a large wok or pot and gently fry the onions until soft and golden. Add the curry paste and cook for a further minute before adding the coconut milk, bring to a gentle simmer. Add the stock, fish sauce, lime juice, sugar replacement, cubed fish and sliced spring onion. Simmer for five minutes or until the fish is cooked. Add the potatoes and coriander, serve.
Tasty tip: Replace the lentils with the same weight of smoked chicken or 160g lean biltong.

Place the quinoa in a small pot along with two cups of water and 2.5ml salt. Cover and cook on a low heat until all the water is evaporated and the quinoa is tender, 20 minutes. Fluff with a fork and place in a large salad bowl. Add the baby spinach, diced onion, green beans, chickpeas and parsley. Top the salad with the crushed pecan nuts. Whisk together the dressing ingredients and serve with salad.

Place all the dressing ingredients into a blender and blend until smooth. Slice the green beans and place on a plate along with the shredded lettuce, and sliced carrots. Top with the salmon, avo slices and sprouts. Drizzle with salad dressing and serve.
