Miso Soup

Heat the oil over medium heat. Add the onions and sauté until translucent and fragrant, about 8 minutes.


Stir in the garlic and ginger and cook for another minute. Add the carrot and vegetable broth.


Bring to a boil then reduce heat and let simmer for 5 minutes, until carrots are tender. Stir in the miso. Add tofu and spinach and cook until spinach is wilted. Serve immediately.

Tip: Add in your own choice of vegetables such as mushrooms or celery to suit your own personal taste.
