Lassi is a popular traditional dahi (yogurt)-based drink that originated in India. Lassi is a blend of yoghurt, water, spices and sometimes fruit. It is a filling nutrient rich snack for in between meals.

Ingredients
3 small carrots, peeled
125ml (½ cup) fresh lemon juice 5cm piece of ginger, peeled and chopped
260ml fat-free plain yoghurt
750ml (3 cups) fat-free milk
150ml freshly squeezed orange juice
Pinch of salt
Instructions
If you have a juicer, juice the carrots with the ginger, collecting the juice.
Combine the yoghurt, milk, orange juice and a pinch of salt in a food processor and pulse until combined.
If you don’t have a juicer, place the carrots in a steamer, sitting over a saucepan of simmering water.
Cook for 7 – 8 minutes until soft. Chop the carrots and blitz together with the ginger, yoghurt, milk, orange juice and a pinch of salt in a food processor until smooth. Pass through a sieve and serve immediately for best results.
